  • 1 cup grated carrots
  • 1/2 cup chopped pecans
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

  3. In a separate bowl, mix together the vegetable oil, eggs, vanilla extract, and buttermilk.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated carrots and chopped pecans.

  5. Divide the batter evenly among the muffin cups, filling each about 3/4 of the way full.

  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Remove from the oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

  8. Serve and enjoy!
