Ingredients

  • 4 ounces of dark chocolate, chopped
  • 1/4 cup of unsalted butter
  • 1/4 cup of granulated sugar
  • 3 large eggs, separated
  • 1/4 teaspoon of cream of tartar
  • 1/4 cup of all-purpose flour
  • 1/4 cup of whole milk
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 375°F (190°C) and grease four ramekins with butter.

  2. In a microwave-safe bowl, melt the dark chocolate and butter together, stirring until smooth. Let it cool for a few minutes.

  3. In a separate bowl, whisk together the egg yolks and sugar until pale and creamy.

  4. Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring until well combined.

  5. In another bowl, beat the egg whites and cream of tartar until stiff peaks form.

  6. Gently fold the flour and milk into the chocolate mixture, followed by the beaten egg whites.

  7. Divide the mixture evenly among the prepared ramekins.

  8. Place the ramekins on a baking sheet and bake for about 20 minutes, or until the soufflés have risen and are set around the edges but slightly jiggly in the center.

  9. Dust with powdered sugar before serving. Serve immediately.
