Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded Mexican cheese blend
  • 8 flour tortillas

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is translucent.

  3. Drain any excess fat from the skillet.

  4. Add the chili powder, cumin, paprika, oregano, salt, and black pepper to the skillet. Stir well to combine.

  5. Pour in the enchilada sauce and simmer for 5 minutes.

  6. Remove the skillet from the heat and set aside.

  7. Warm the flour tortillas in the microwave for 30 seconds to make them more pliable.

  8. Place a heaping spoonful of the beef mixture in the center of a tortilla and roll it up tightly. Repeat with the remaining tortillas and beef mixture.

  9. Place the rolled tortillas in a baking dish, seam side down.

  10. Pour any remaining enchilada sauce over the top of the tortillas and sprinkle with the shredded cheese.

  11. Cover the baking dish with foil and bake for 20 minutes.

  12. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

  13. Serve hot and enjoy!
