How To Make Chicken and Vegetable Soup
A hearty and savory soup filled with tender chicken and fresh vegetables.
Serves:
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 8 cups chicken broth
- 1 zucchini, diced
- 1 cup fresh or frozen corn
- Salt and pepper, to taste
Instructions

In a large pot, heat the olive oil over medium heat.

Add the onion, carrots, and celery and cook until softened.

Add the garlic, thyme, and oregano and cook for an additional minute.

Add the chicken broth and bring to a simmer.

Add the diced chicken and simmer until cooked through, about 10 minutes.

Add the zucchini and corn and simmer for an additional 5-10 minutes until vegetables are tender.

Season with salt and pepper to taste.
